I have made this same recipe multiple times and it never fails me. I just made these with the banana rather than egg… WOW WOW WOW! Make it healthier – Substitute the plain flour for whole wheat or coconut flour. These are so yummy!! But sadly I am not a huge fan of this recipe. I’m so glad you can add this recipe to your soft food diet and I hope your jaw feels better soon. they’re just so awesome It’s made me like pancakes again! Its Sunday today and I think I deserve another serving hehe :-p. So glad you liked them Vineeta, I think you deserve another serving too! I will definitely make these again but keep playing with the recipe so it’s not running all over my pan next time. In the meanwhile, a good excuse to eat even more pancakes! That makes more sense. I live alone in an apartment and I can’t make big recipes but i love to eat different types of food and try new things. One delicious and utterly satisfying large pancake with frozen blueberries in my belleh! I also used whole wheat flour since that was I had – delicious all the same! I had never made pancakes with banana instead of eggs but have heard a lot about it and since I ran out of eggs this morning I thought I’d give it a go. Fluffy without being dry, tender and not chewy, crispy on the outside soft on the inside, yet eggy and tall. :D ) and I love it ! I subbed the oil for canned pumpkin and added nutmeg and cinnamon to the dry ingredients + vanilla extract with the wet and they were……incredible. Friends Who Move added some thawed frozen blueberries (look at that blue batter!) I had an intense pancake craving the other weekend, but had no one to enjoy them with and didn’t want stacks of leftovers. This easy recipe makes a small batch of pancakes and is perfect for those Cooking for One. Next time I’ll halve the sugar! I made 5 pancakes about 10cm in diameter. Used whole wheat flour, almond milk and coconut oil, topped with fresh kiwi. I am glad both you and your boyfriend are loving the Lonely Girl pancake recipe as much as me :) Pancakes for all!! I think it was because I didn’t add the baking powder, because I had none! i had to use a different recipe for breakfast that wasnt bland and flat. I also stuffed it with Nutella, wich made it even better. x. Thanks for the recipe! I am hoping to do more single serve recipes in the future :). Allie topped her Lonely Girl Pancakes with my Cheats Berry Sauce (recipe below) and it looks incredible. I recently moved in with my boyfriend and have been doubling the recipe because he is ALSO obsessed. I made them twice just to make sure and they were definitely not of pancake texture but almost wet and crepe like. Possibly the scrummiest pancakes I’ve ever eaten! Hello! Glad you enjoyed it Renee :). Thanks so much for the recipe. And I am definitely going to have to give them a try with cocoa, yum! I think the regular version comes out a little too egg-tasting and kind of like crepes, but the vegan version is actually very nice and fluffly. Tasted very “autumn” which is what I was craving. I assume you took a regular recipe and cut it down, yet when I try to expand this recipe it never works. These were perfect with blueberries and maple syrup. Hope that helps :), I made these tonight they were perfect thank you :), You are very welcome! So versatile! Yummm :), Oh yay so glad you liked them Sonali!! Love your healthier alterations too :), […] that Sundays are for pancakes. Glad you enjoyed the recipe :). So I thought I’d improvise a single serve pancake recipe partially out of curiosity, and partially because I have no self control and would end up eating the remainders cold, straight out of the fridge. Beat the egg white and a pinch of salt with an electric whisk (or by hand) until fluffy and holding its … Oh yum, adding Nutella is always a good idea!! Oh yay! Oh Pat, I am so pleased you enjoyed this recipe! Just the right amount for one and the pancakes were delicious! Ladle about ¾ cup of the batter onto the skillet to make a pancake. x. I too have very little self restraint, so this is perfect! Kept sticking to the pan even though I’m sure I was using enough oil, the heat was pretty low and I wasn’t leaving them too long before turning – or trying to turn! And I love the addition of mixed spice, what a great idea xx. I rarely make pancakes but this is a perfect serving size and great flavor. I added a little bit of salt to the mix and topped them with honey and a little bit of icing sugar. I added about 1/4-teaspoon. :)), So glad you liked it Sandy, I am working on some more small-sized recipes! As a fifteen year old girl who LOVES cooking desserts, I like making stuff only for myself. LOVE the cheat sauce. i used fresh ingredients, my liquid (pancakes) didnt rise, it stayed like water and my 4yr old was very dissapointed in the flat things that came out. I will look into creating a recipe for a larger amount of these :). Substituted the milk with almond milk then topped when with cinnamon and they were amazing. I had them with homemade cinnamon syrup for breakfast <3, I am so glad you liked them Ann, they are my favourite breakfast! If the batter seems … Learn more and join us! These are awesome!
